I would leave Dakar by boat to Zigchuinor & pick up your G.Bissau visa there. The coast to the south of Dakar is built up with package holiday hotels so you won't miss much plus the Gambia border is a pain so you'll bypass all this by boat.

G.Bissau is lovely, remote, not many travellers at all. When I was there I met one other. The islands are a UNESCO heritage site, you may find other travellers on Bubaque, we didn't at the time!

Transportation either by train or by bus is the cheapest and nice way. Traveling with family or friends by train or bus would be a wonderful experience.

According to me family vacation is best way to enjoy your trip and if you will definitely enjoy a lot if you choose your travel by bus.
